Green Beans with Mustard and Caper Dressing

200g round green beans – trimmed and cut into smaller pieces

Dressing

  • 1 tbsp chopped capers
  • 2 tsp lemon juice
  • 1 tsp dijon mustard
  • 1 tbsp Italian parsley – chopped
  • 1 tbsp light lime dressing
  • Salt & pepper to taste

METHOD

  • Cook beans in salted boiling water until just tender and still bright green
  • Run under cold tap
  • Drain
  • Mix dressing ingredients together and toss through beans
