Green Beans with Mustard and Caper Dressing
200g round green beans – trimmed and cut into smaller pieces
Dressing
- 1 tbsp chopped capers
- 2 tsp lemon juice
- 1 tsp dijon mustard
- 1 tbsp Italian parsley – chopped
- 1 tbsp light lime dressing
- Salt & pepper to taste
METHOD
- Cook beans in salted boiling water until just tender and still bright green
- Run under cold tap
- Drain
- Mix dressing ingredients together and toss through beans
