½ Cauliflower
2 Spring onions – finely chopped
1 Cup coriander – roughly chopped
½ Green pepper – finely chopped
½ Punnet of cherry tomatoes – halved
Dressing
2 Tbsp Thai sweet chilli sauce
2 Tbsp White wine vinegar
¼ tsp cumin
Salt and pepper
METHOD
- Roughly blitz cauliflower in food processer (or grate by hand) into a “rice” consistency
- Add chopped vegetables and coriander
- Mix dressing ingredients then fold through the cauliflower rice
